As we roll into summer, it’s fun to mix things up in the food department. To help you do so, we’ve added some unique (and easy to make) recipes using our Veggie Fries, Veggie Tots and Veggie Rings!

Veggie Ring Mini Frittatas
- 1 package Veggie Rings
- 6 ounces breakfast sausage (casings removed), crumbled
- 2 cup diced fresh tomatoes
- 6 eggs
- 1 cup milk
- ½ tsp. salt
- 1/8 tsp pepper, optional
- 1/2 cup shredded cheddar cheese
Preheat oven to 425° and prepare Veggie Rings according to package directions. Cook and stir sausage in a skillet over medium heat for 3 minutes, or until cooked through. Stir in tomatoes, then remove from heat. Whisk eggs, milk, salt & pepper in medium bowl. Grease 12 muffin cups. Place a baked Veggie Ring in bottom of each cup. Divide sausage mixture and cheese evenly among the 12 cups. Pour egg mixture into muffin cups, filling each one about 3/4 full. Top each cup with a baked Veggie Ring. Bake 15-18 minutes until egg mixture is firm and set. Enjoy! Yields: 12 mini frittatas.
In a rush? Make the mini frittatas without prebaking the Veggie Rings. While they may not be as crispy, they’ll be just as tasty!
Veggie Fries & Chili
- 1 package Veggie Fries
- 1 lb ground beef
- 1 cup diced onion
- 1 cup diced bell pepper (red, yellow or green)
- 2 garlic cloves, chopped
- 1 can (8 oz.) tomato sauce
- 1 can (14.5 oz.) diced tomatoes
- 1 Tbsp. chili powder
- ½ tsp salt
- ½ tsp. cumin
- ¼ tsp. dried oregano leaves
- Topping suggestions: sliced scallions, shredded cheddar cheese, sour cream
Directions: Cook and stir ground beef in a large skillet over medium-high heat until evenly browned. Drain off any grease, and remove beef from skillet. Add onion, bell pepper and garlic to skillet. Cook and stir over medium heat for 3 – 4 minutes until softened. Return ground beef to skillet. Stir in chili powder, cumin, oregano and salt cook 1 minute. Stir in tomato sauce and diced tomatoes. Bring chili to a boil and reduce heat to medium low. Simmer for 20 minutes, stirring occasionally. While chili is simmering, preheat oven 425° and prepare Veggie Fries according to package directions. Arrange baked Veggie Fries in bowls or on a platter, spoon chili onto Fries. If desired, top with sliced scallions, shredded cheddar cheese or sour cream. Yield: 4 servings.
- 1 package Veggie Fries
- 2 cups cooked chicken, shredded ( about 8 ounces)
- ½ cup ranch dressing
- 3 scallions, sliced (about 1/3 cup)
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 3 slices cooked bacon, crumbled
Directions: Preheat oven to 425° and prepare Veggie Fries according to package directions. Combine chicken, ranch dressing and scallions in a medium bowl and stir gently. Remove Veggie Fries from oven. Top Fries with chicken mixture, sprinkle with cheddar cheese, mozzarella cheese, and bacon. Return baking sheet to oven for 3 – 5 minutes, until cheese is melted. Yield: 4 servings.
Tot Dogs on a Stick
- 1 package Veggie Tots
- 1 poblano or bell pepper, cut into 1-inch pieces
- 1 onion, cut into 1-inch pieces
- 4 hot dogs, cut into 1-inch pieces
- 8 10-inch wooden skewers, presoaked
Directions: Preheat grill to medium high heat (or preheat oven to 425°). Remove Veggie Tots from freezer and let rest for 10 minutes at room temperature to soften. Thread Veggie Tots, bell pepper, onion, and hot dogs onto skewers. Place a sheet of foil on grill place skewers on foil (or line a baking sheet with parchment paper). Grill (or bake) skewers for 15-20 minutes, or until hotdogs are cooked though. Yield: 8 skewers.
